Corn Spoon Bread

8 oz package cream cheese
1/4 cup butter
14.75 oz can creamed corn
14.75 oz can corn kernels, drained
1 egg
8.5 oz package of corn muffin mix
1/8 teaspoon salt
1/8 teaspoon pepper

Preheat oven to 375 deg.
Coat 1 1/2 qt baking dish with cooking spray.
Heat cream cheese in mirowave on high in 10 sec intervals untill very soft.
Repeat with butter.
In bowl, whisk cream cheese and butter untill smooth.
Whisk in creamed corn, corn kernels and egg.
Whisk in muffin mix, salt & pepper.
Pour in baking dish.
Bake 55 minutes or until lightly browned & set.

Makes approx. 8 servings
